Ingredients
  

  • 1 cup flat-leaf parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons red wine vinegar
  • ½ cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste

Instructions
 

  • Finely chop parsley and garlic.
  • In a bowl, mix parsley, garlic, oregano, and red pepper flakes.
  • Stir in vinegar and olive oil.
  • Season with salt and pepper.
  • Let sit at room temperature for 30 minutes to allow flavors to meld.
  • Store in the refrigerator for up to 1 week.

Notes:

  • Do not use a food processor if aiming for authentic texture.
  • Can be adjusted for spice with more chili flakes or fresh chili.
  • Flavors intensify after resting overnight.
