- 1 cup all-purpose flour (or oat/almond flour)
- 1 tbsp sugar (or stevia/coconut sugar)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- Pinch of nutmeg
- 1 egg (or flax egg)
- ¾ cup milk (or plant-based milk)
- 1 tsp vanilla extract
- 1 tbsp melted butter or coconut oil
- 1 medium apple, grated or finely chopped
- Optional: lemon zest, maple syrup, yogurt for topping
Mix dry ingredients in one bowl.
Whisk wet ingredients in another bowl.
Combine both, then fold in grated apple.
Heat a skillet to medium. Drop small scoops of batter.
Cook each side 1–2 minutes until golden.
Serve warm with toppings.
