Ingredients
  

  • 1 cup all-purpose flour (or oat/almond flour)
  • 1 tbsp sugar (or stevia/coconut sugar)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • Pinch of nutmeg
  • 1 egg (or flax egg)
  • ¾ cup milk (or plant-based milk)
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or coconut oil
  • 1 medium apple, grated or finely chopped
  • Optional: lemon zest, maple syrup, yogurt for topping

Instructions
 

  • Mix dry ingredients in one bowl.
  • Whisk wet ingredients in another bowl.
  • Combine both, then fold in grated apple.
  • Heat a skillet to medium. Drop small scoops of batter.
  • Cook each side 1–2 minutes until golden.
  • Serve warm with toppings.

Notes:

  • Let batter rest for 10 minutes for fluffier texture.
  • Freeze leftovers and reheat in toaster or oven.
  • Great for toddlers and meal prep.
