  • 1 ripe mango, peeled and diced
  • 2 chipotle peppers in adobo sauce (adjust for heat preference)
  • 1 tbsp honey
  • Juice of 1 lime
  • 2 tbsp apple cider vinegar
  • Salt to taste

Instructions
 

  • Make the Sauce: In a blender, combine mango, chipotle peppers, honey, lime juice, apple cider vinegar, and salt. Blend until smooth.
  • Marinate Shrimp: Toss shrimp in olive oil, garlic, smoked paprika, salt, and pepper. Let sit for 15-20 minutes.
  • Cook Shrimp: Heat a large skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes per side, or until pink and opaque.
  • Combine: Pour the mango chipotle sauce over the cooked shrimp and stir to coat. Simmer for an additional 1-2 minutes to allow flavors to meld.
  • Serve: Garnish with cilantro, a squeeze of lime, and chili flakes, if desired. Serve with rice or grilled vegetables.
